Super Simple Summer Salads
On hot days, it is difficult to think of anything but salad and fruit to eat, so here are some good ideas for when the LTC standard does not inspire
NO Cooking Required….
- Cube watermelon and combine with tomato chunks, basil and a basic vinaigrette.
- Mix wedges of tomatoes and peaches, add slivers of red onion, a sprinkle of paprika and fresh coriander leaves. Dress with olive oil and lime or lemon juice.
- Grated carrots tossed with a sprinkle of raisins, cumin, olive oil, lemon juice and coriander.
- Cherry tomatoes, halved; toss with tamari, olive oil and basil or coriander leaves.
- Canned chickpeas, sliced carrots, halved cherry tomatoes and toss with olive oil, lemon juice, and lots of chopped fresh parsley and mint.
- Baby spinach or arugula, a tin of red kidney beans, chopped cherry tomatoes, sliced cucumber and red pepper. Lightly sprinkle with a mix of garlic infused avocado oil, rosemary, lemon zest or juice or both.
- Mix canned chickpeas with shredded carrots, chopped celery, curry powder, olive oil, lime juice and fresh coriander leaves.
- Cube watermelon; combine with roughly chopped mint, crumbled feta, sliced red onion and chopped calamata olives. Dress lightly with olive oil and lemon juice.
- Grate raw baby beetroot and toss with watercress or arugula. Sprinkle some balsamic crème, or plain balsamic vinegar over.
- Arugula, pawpaw, strawberries, red onion, mint leaves, and crumbled feta. Sprinkle with lemon juice.
- Combine rocket, avocado, tomatoes, black olives, balsamic vinegar and olive oil
- Tinned chickpeas, red onion, garlic, tomatoes, fresh coriander, celery, lemon juice & olive oil with salt & pepper to taste
- Cold chicken, celery, cubed apple & pecan nuts…..can add rocket / baby greens for leaves
- Baby greens, grated raw beetroot, mint leaves, watercress, grated carrot & lemon & honey dressing….
