Herbed Chicken

Herbed ChickenIngredients:
6 Chicken Thighs
4 tsp Olive oil
4 sprigs Rosemary
8 leaves Sage
2 Tbsp chopped celery
2 tsp grated orange rind
3-4 sprigs Lemon Thyme
50ml Lemon Juice

Method:
Preheat oven to 180oC
Arrange chicken in a casserole dish
Drizzle chicken with olive oil and lemon juice, and sprinkle with roughly chopped herbs.
Place in the oven & bake for 20-30minutes until chicken is cooked through.

Citrus Chicken

Citrus ChickenIngredients:
500g chicken pieces
1 onion
2 cloves garlic, crushed & set aside for 10 minutes
5ml cinnamon
3ml ginger
3ml Turmeric
250ml Orange juice
1 Orange, sliced into rounds
Salt & Pepper
15ml Avocado Oil (optional)

Method 1:
Brown chicken in oil. Add onion, garlic & spices and braise for 1-2 minutes. Place chicken a casserole dish, add all ingredients, and bake at 180oC for 20minutes.

Method 2 :

Add all ingredients to casserole dish & bake at 180oC for 20-30 minutes.

Chicken & Mustard

Herbed ChickenIngredients:
4 Chicken Breasts
1 Tbsp Wholegrain Mustard
30ml Lemon Juice
Generous sprinkling oregano

Method:
1. Preheat oven to 180oC
2. Place chicken in casserole dish
3. Spread mustard onto chicken
4. Pour on lemon juice
5. Sprinkle generously with oregano
6. Bake for 20 minutes or until chicken is cooked.

Thai Chicken

Thai ChickenIngredients:

15ml Chilli infused Avocado Oil
15ml Garlic infused Avocado oil

4 Chicken breasts, thinly sliced

½ small onion, chopped
½ tsp grated ginger
1 tsp brown organic sugar
1 tsp tamari
1 handful fresh coriander leaves
1 tsp sliced lemongrass
125ml Coconut milk

Method :

Heat chilli oil & brown chicken
Blend rest of ingredients in a food processor to make a paste.
Add paste to chicken when browned
Add coconut milk and serve once heated through.

Quick Spiced Chicken

Quick Spiced ChickenIngredients:
4 boneless chicken thighs
20ml Olive Oil
2 Tbsp Fruit Chutney
5ml Curry powder
4 ripe tomatoes, cut into quarters

Method:
Preheat oven to 200oC.
Place chicken pieces into a casserole dish
Mix oil, chutney and curry powder in a bowl & pour over chicken
Add tomato & bake for 15-20 minutes until chicken is done.

Serves 4
