Baked Fish with Salsa
Ingredients:
4 Hake Fillets
4 tsp olive oil
8 sundried tomatoes (in oil)
½ jelapino chilli pepper
1 small onion
Juice of 1 lemon (30-50ml)
125ml breadcrumbs
Method :
Preheat oven to 180oC Place fish in a casserole dish Blend the rest of the ingredients (except breadcrumbs) in a blender to desired consistency & spread over fish. Sprinkle with breadcrumbs & bake for 25 minutes or until top is crispy and fish is flaky.
